Boiled Frostings

 
 

 

 
 

Boiled Frosting #1

1 1/2 cups sugar
5 tablespoon water
1 tablespoon corn syrup
2 egg whites

Mix sugar, water and corn syrup
cook until syrup spins long thread [215° F–234° F].
Beat egg whites until stiff but not dry.
Add syrup gradually to egg whites,
beating until frosting stands up in peaks.

Boiled Frosting #2

1 cup sugar
5 table s water

boil till it strings

Then pour into the whites of 2 well beaten eggs

Frosting Fine

1 cups sugar
3 table s cold water
1 egg white

put over boiling water

& stir with eggs beater till thick like cream

then beat till cool

add vanilla.
